				<content:encoded><![CDATA[<p>West Side is a hoppy amber Belgian-style beer.  The hoppiness is derived from quintessential West Coast hops. Hop character is forward, yet restrained, and sits at ~40IBUs (i.e. on the lower end of an American IPA) so not to dominate the flavors and aromas of malt and fermentation.  The malt is mellow and relatively neutral with perhaps notes of toast, toffee, caramel, and/or stone fruit. Balance is desired on every level; thus, overly estery/phenolic fermentations and/or overly robust maltiness are not desired.<br />
I have made many revisions to improve West Side.  A month ago, while staring deeply into the steel pot of boiling invert syrup, I had an insight.  Use our house made amber candi syrup to provide color, complexity, stone fruity flavors and remove the small fraction of roasted Belgian crystal malt.  I would still use the same fraction of crystal malt, but a lighter crystal malt that will provide a more neutral vanilla light caramel maltiness and still maintain the desired body and structure.  Further, I can add a layer of character, while adjusting my color with the candi syrup!  This will eliminate the slight roast bite at the end of West Side that I don’t much care for, without interrupting the intended overall impression.  In fact, the increase in complexity and the resulting depth of flavor will bring us closer than ever to the intended overall impression.<br />
The first couple batches were lighter than intended.  The flavors contributed from the sugar were very neutral, resembling cotton candy sweetness.  I actually miss the complexity from the roasted crystal malt.  So, I’ll adjust the malt bill to be darker, keep the candi sugar and hopefully arrive at perfection!</p>

<p>Harriet Brewing is celebrating our Two Year Anniversary in true Harriet fashion at the El Nuevo Rodeo on January 19th. From 6 PM to 1AM, we’re taking over all 12 taps, showcasing a variety of local musicians/artists, and hanging out with the community that has helped us make our first two years absolutely incredible! We have some exciting new selections and one-offs in addition to your old favorites for the total tap takeover.</p>

<p><strong>Elevator Doppelbock makes its return!!</strong><br />
Elevator Doppelbock is traditionally brewed using the decoction method and is lagered for two months. This beer is rich and malt driven, with characteristics of dark fruit and caramel supported by a light toastiness and just enough bitterness from the hops to keep it balanced. Elevator is hearty, yet clean and complex. It’s tempting to make this a daily ration of liquid bread… you know, to honor the monks. 8% ABV • 20 IBU</p>
