Elevator – 12oz/$6.50 – Doppelbock – 8% ABV • 20 IBU
Elevator Doppelbock is traditionally brewed using the decoction method and is lagered for two months. This beer is rich and malt driven, with characteristics of dark fruit and caramel supported by a light toastiness and just enough bitterness from the hops to keep it balanced. Elevator is hearty, yet clean and complex. It’s tempting to make this a daily ration of liquid bread… you know, to honor the monks.
West Side – Pint/$6 – Belgian-Style IPA – 6.5% ABV • 40 IBU
West Side is an eclectic ale brewed to balance the brightest West Coast hops with a prolific Belgian yeast strain. It pours light copper with white head. Its subtle malt gives way to a fruity, citrusy, and slightly spicy aroma and flavor. The medium-bodied West Side is snappy and leaves your palate refreshed.
East Side – Pint/$6 – Belgian-Style IPA – 6.5% ABV • 40 IBU
East Side is our homage to the hoppy Belgian Goldens that inspired the rarely seen Belgian IPA. East Side has a floral, light fruity and earthy character with spicy undertones and a clean yet sturdy malt backbone, but you’ll have to come and find out for yourself! Only one batch of this delicate offering was brewed.
Dark Abbey – 12oz/$6.50 – Belgian-Style Dubbel – 7.5% ABV • 25 IBU
Our Belgian-Style Dubbel pours deep ruby-brown with an off-white head. Classic banana notes coupled with rum-raisin and dried fruit flavors are complimented by subtle spiciness from the yeast. This beer is full of flavor yet finishes clean and dry.
Divine Oculust – 12oz/$6.50 – Belgian-Style Golden Strong – 8.5% ABV • 35 IBU
Our Belgian-style Golden Strong Ale pours golden with a persistent white head. Classic banana, light fruitiness, subtle spice and alcohol flavors derived from yeast are complimented with an abundance of noble hops which enhance the light fruity character and contribute a pleasant floral note. Divine Oculust is medium-light bodied, and deceptively easy to drink for its strength.
Divine Resolution – 12oz/$6.50
Fresh mandarin orange peel and coriander have been added to Divine Oculust to enhance the spiciness and add a subtle citrus note, making it even more drinkable and refreshing.
Dogwood Coffee Elevators – 12oz/$6.50
These two variations of coffee infused dopplebocks were created to show how these coffees can subtly influence the already present characteristics of the Elevator, while maintaining a balance between the two beverages. The Tchembe Ethiopian blend compliments the fruitiness of the Elevator, while the Dogwood Espresso blend compliments its toasted character.
Dry Hopped West Sides – Pint/$6.00
A selection of single varietal dry hopped West Sides have been created to feature the varying degrees of citrus, pine, and herbal characteristics that west coast hops showcase. Cascade, Citra, Centennial, Chinook, Amarillo, and Simcoe dry hopped West Sides will be available throughout the evening.
Dry Hopped Divine Oculusts – 12oz/$6.50
Sorachi Ace is an up and coming hop that adds an oddball lemony-dill character to the Divine Oculust. Saaz adds earthy green tea notes to the Divine Oculust.
Orange Liquor Barrel Aged Divine Oculust – 12oz/$6.50
Orange liquor soaked oak lends a honeyed orange character and deep oak reminiscent of black pepper.
Merlot Barrel Aged Dark Abbey – 12oz/$6.50
Toasted oak and remnants of fruity Merlot compliment Dark Abbey.
Lapsong Souchong Tea Infused Dark Abbey – 12oz/$6.50
This smokey black tea is added in a way to maintain restraint, while complimenting Dark Abbey with a hint of smokiness.
Jasmine Tea Infused Divine Oculust – 12oz/$6.50
The jasmine tea infused Divine Oculust was made to bring out the floral tones in the beer.
